  •  Eggs- 3-4
  •  Onion- 1 large finely chopped
  • Curry leaves- handful
  •  Turmeric powder - 1 / 4 tsp
  •  Red chilli powder 1/2 tsp
  • Seed mustard -1/2 tsp
  • Cumin (jeera seeds) -1/2 tsp
  • Salt in requisition
  • Gingelly oil (or groundnut oil) 2* tbsp
  • Coriander leaves- to garnis

Here are some few steps on how we can bring the tradition into your kitchen:

1. Cook Rice or Use Leftover Rice

  • When using fresh rice, avoid a soft one.
  • Put it in a plate and allow it to cool 15-20 minutes.
  • Old rice left over in the afternoon, is best--that is the way Grandma did it!
  • 2. Make Egg Mixture

2.Break 3-4 eggs in a bowl.

  • Put in a pinch of turmeric and a little salt.
  • Stir hard and keep in readiness.

3. Heat Oil in Kadai made of iron

  • Heat a heavy-bottomed pan or an iron kadai using 2 tbsp oil.
  • Put in some mustard seeds. As soon as they should splutter add jeera.
  • Add green chillies and curry leaves.
  • It is also possible to add some crushed garlic here to give some village flavour.

4. Fry the Onions

  • Add cut onions and fry till they get golden brown.
  • Never be in a hurry to do this. The sweetness of the rice is owed to the caramelised onions.

5. Scramble the eggs.

  • Pour now the beaten eggs into the kadai.
  • Give them a couple of minutes to settle then stir.
  • Whisk the eggs softly so that they are not rubbery.

6. Add Spices

  • After eggs are scrambled add tumeric and chilli powder.
  • Stir until this coats the eggs with masala.

7. Then add the Cooked Rice

  • Carefully, put in some rice and stir everything.
  • Don t break the rice with your hand.
  • To taste add salt. Stir 2-3 min. till all becomes mixed.

8. Serve:

  • Turn off fire. Add coriander leaves chopped.
  • A couple of drops of ghee may also be sprinkled to give aroma.
  • Eat it in hot with a slice of pickle or papad.
